Our Artisan Bread Flour contains 80 percent of the natural wheat berry proportions of bran, endosperm, and germ. This flour is ground to the same consistency as our Bread Flour, but only includes 25 percent of the germ and bran. This mixture makes it perfect for artisan breads including sour dough since it includes a higher proportion of endosperm There were no pesticides used during the growing season of the wheat and no additives, chemicals, bleaching agents, or preserviatives were used during the milling process.
