Our “00” Flour contains 65 percent of the natural wheat berry proportions of endosperm. At this mill size the bran and germ have been removed. This flour is our finest flour and feels like silk in your hands. Our unique milling process allows us to work down the grain into this specialty flour with only the use of our granite stone mill. This mixture makes it perfect for use in homemade pasta and pizza crusts, but it could also be substituted for our baking flour for other delicious baked goods. There were no pesticides used during the growing season of the wheat and no additives, chemicals, bleaching agents, or preserviatives were used during the milling process.
